Baked Oatmeal Donuts

 I used this baked oatmeal in my donut pan and it worked great. You can fill them pretty full they do not rise too much. I had enough mixture for 8 donuts Ingredients: 1 banana 1 cup oats 3/4 cup milk 1 egg 1 tsp baking powder 1 tsp vanilla 1.5 TBS maple syrup couple dashes cinnamon Directions: blend in blender, meanwhile grease donut pan bake at 375 for 13-15 min I topped with melted chocolate (and sprinkles for Quinn) Could also add choc chips I loosely followed whinnyhayes baked oatmeal recipe from TikTok. 2/13/24

Gumbo

Ingredients: 1/2 cup oil 1/2 cup flour 1/2 big onion 2 celery sticks 1 green bell pepper 3 small red bird chicken breasts 1/2 lbs smoked sausage (blue label)  5 cloves garlic cajun seasoning 2 cans (14.5oz) chicken broth 1/3 cup water 2 bay leaves Directions: 1. cook veggies for 7-10 min, remove from pot, cook chicken and set aside. In same pot start the roux. scrape up the brown bits. Cook roux for 15-20 min until dark brown. 2. Add in veggies and sausage and cook for 5 more min. Add in the last 5 ingredients and let simmer for 15 more min. Add in chicken before serving. Serve with rice. Made 3 adult servings and 1 small Quinn serving. I gave her 1/4 of the sausage on the side and she ate all that. Made 1/2 cup rice and that was perfect as we used smaller servings. I loosely followed WhinnyHayes recipe from TikTok. Bang Bang Shrimp with Coleslaw

Used the frozen fried shrimp from King Soopers Coleslaw Mix Corn tortillas or flour sweet chili see others below that I probably have on hand: Coleslaw mix: Mayo, tablespoon or so vinegar, dab mustard, sugar, black pepper Bang Bang Sauce - didn't measure - more mayo than sweet chili. Mayo Sweet Chili Sriracha

TikTok Spaghetti

This was soooo good. I will never make regular spaghetti again.  Served with garlic bread. I made the full recipe and put half in the freezer.  Ingredients: 1 28oz jar of Rao Marinara 1 15 oz jar of Rao Alfredo 1 lb box linguine or whatever pasta   2 cups mozarella 1 lb ground beef 1/2 onion parmesan (optional) 1. Cook linguine according to package, drain and add in alfredo 2. Cook ground beef with onion, add italian seasoning and garlic powder, S&P. Drain add in marinara. 3. Layer linguine alfredo in a pan. Then put the marinara/beef mixture on top. Do not stir. Layer top with cheeses. 4. Bake 350 for 30 min (60 min if frozen)
