Scalloped Potatoes

Nice easy recipe that turned out great! I baked with a lid on for the first hour but it burned around the edges so next time maybe only use a lid for 30 minutes or not at all.  I also baked at 350 for 90 minutes since that is what my oven was set at for the ham. Serves 4 people Ingredients: 6 larger russet potatoes, peeled and sliced 3 Tb flour 3 Tb butter 2.5 cups milk Cheddar cheese (1.5-2 cups) Salt and pepper Directions:  Recipe credit and video here Layer: potatoes / cheese / S&P  Over top layer pour the roux and top with cheese.

Banana Bread

For this I used the corning ware white dish that is almost the same shape as a bread pan and it worked great!  I did not have buttermilk so I mixed together 1/2 cup milk (1 percent) and 1 tablespoon of lemon juice. (Stir and let sit for 20min to curdle) . Could also half this. Ingredients: 1 cup sugar 1/2 cup butter, softened 1 1.2 cups flour 1/2 tsp baking soda 1/2 tsp salt 2 eggs 1 tsp vanilla 1/4 cup buttermilk 3 bananas Directions: Cream butter and sugar together, add eggs 1 at a time, add in bananas and mix.  Add in buttermilk and vanilla Mix together flour, baking soda and salt in a separate bowl and then mix in. Pour into buttered dish and bake for 60 min at 350 degrees
