EASY Beef Stroganoff

This beef stroganoff uses ground beef and is delicious and yummy. I have another recipe where I use stew meat and I will post that later. This is a super quick recipe and does not take many ingredients. I use to love Hamburger Helper Beef Stroganoff and this is similar but homemade and much healthier. Ingredients: 1 Tbs olive oil 8 oz mushrooms 2 Tbs diced onion (optional) 1 lb ground beef 8 oz wide egg noodles 2 cups fat free milk (or any milk you have) 1 1/2 cups beef broth 1 Tbs corn starch salt and pepper 1/4 tsp paprika 2/3 cup sour cream Instructions: 1) Heat olive oil over medium heat, add onions and saute for 5 minutes until translucent.Season with salt 2) Add mushrooms and saute until tender. Set aside in bowl. 3) Add ground beef to the pan (season with salt and pepper) and cook until brown. Potatoes and Peppers

I am obsessed with potatoes. I have so many ways to make them and I will eventually share all of them with you. This recipe is simple and oh so yummy. Oh and very EASY! Ingredients: 2 small potatoes 1 bell pepper (I did half green and half orange) 1 Tbs olive oil 1 Tbs butter Seasoning Salt Directions: 1) Dice up your potatoes and peppers into equal size. 2) Heat a pan over medium heat and add butter and olive oil 3) Once hot, add potatoes and sprinkle with seasoning salt. 4) Cover with a lid for 5 minutes until potatoes are tender. 4) Add peppers and saute until the mixture is nice and crispy.  Enjoy!

EASY Homemade Chicken Strips

I LOVE chicken strips. The  crispy  outside with the tender and juicy inside - just makes my mouth water thinking about it. The other night I was craving chicken but I didn't want to leave the house. I also didn't want to fry anything in a bunch of oil because I didn't want to deal with the mess and of course it's not healthy. I like to put Frank's red hot on top of these for a little extra spice. Or you can serve with Ketchup. or both! :)  Ingredients: 2-4 Chicken breasts (cut in half lengthwise) 1/2 cup Italian bread crumbs 1/2 cup Milk 4 TBS Butter Directions: 1.  Heat butter over medium / med-high heat 2. Add the Italian bread crumbs and milk into  separate  bowls. 3. Season the chicken with salt and pepper  4. Dip into  milk , then dip into the breadcrumbs, and then add to med-hot pan. 5. Once hot, add the chicken and fry on each side for 4-5 minutes depending on size. I served these with my potato and pepper mix

Cheese Omelette with Peppers and Turkey

Breakfast! I do not know how people skip breakfast. That is when I am the hungriest. It is also much healthier for you! Get that metabolism started early! This recipe is something easy to make for breakfast. I like to eat these on the weekdays, I will make it the night before then all I have to do is heat it up before work. I like to top it with a little salsa if I have that on hand. Ingredients: 2 Tbs olive oil 1/2 onion 1/2 green bell pepper 1/2 red or orange bell pepper 1 Jalapeno (optional) 1 small potato 1/2 cup turkey (I used oven roasted from the Deli) 1/3 cup Parmesan cheese 6 eggs 2 Tbs milk Salt and pepper Directions: 1) Heat oil in a heavy non-stick pan (oven proof) and cook the onion, peppers and potato until they start to brown. Curry Chicken in the Crockpot

I love Indian food. I have tried numerous recipes at home trying to replicate the wonderful flavors that come from the authentic restaurants - no such luck. This recipe comes pretty darn close though. I think the simmering in the crock pot helps bring the spices out and hide the tomato taste. I like it spicy so I added cayenne and red pepper flakes - you can always omit these or lower these if you don't want the spice.
