Monster Cookies

My favorite type of cookie - the monster cookie. A chocolate chip cookie with peanut butter, M&Ms, and oatmeal. It is best fresh out of the oven with a scoop of ice cream on top. Pizookie style just like the restaurants.  MY weakness, typing this up is making me want this! Ingredients: 1 bag of betty crocker chocolate chip cookie mix 1/4 cup peanut butter 1/3 cup M&Ms 1/4 cup quick cooking oats 1 stick of butter 1 egg Directions: 1) Heat oven to 350. Or 375 for dark or nonstick pans. Soften the butter in the microwave, add the peanut butter right away and mash together with a fork.  2) Once the butter cools, add in the cookie mix and stir 3) Add in the egg 3) Add in the oats and M&Ms and stir until combined 4) Cook for 9-10 minutes Enjoy!

EASY Fish Tacos

I love fish tacos sooo much, usually they take forever to make and I've been trying to experiment with different ways to cut the time down. The frying had to go first because that always takes a big chunk of time. Next, I wanted a flavorful sauce and cabbage that were easy to whip up. Done. I made these in about 25 minutes and they were some of the best I have made.  I don't like corn tortillas so I always get flour and crisp them up real nice on a skillet before I form my taco. I also topped the tacos with some tomatoes even though that is not really used in fish tacos, that part is optional.   The ingredient list my seem daunting but I had most of the ingredients on hand, and I bet you do too. Southwestern White Bean Soup

I am not a fan of chili, I don't know why - maybe I ate too much of it as a kid. Even though this soup has 'chili' in its name - it is so different from a traditional chili. It is also getting warmer out, but we had a cold spell this weekend and I was also a little under the weather. So I felt obliged to make a soup - and this is one of my favorites. It has a nice spice to it because I use the hot green chilies. I also grilled the chicken because I think it adds so much flavor to the chicken, but if you don't have a grill just cook it on the stove top.   Ingredients: 1 lb grilled chicken Olive oil 2-3 cloves of garlic, minced 2 onions, chopped 1 1/2 Tbs cumin 2 Tbs chili powder 8 oz diced green chilies 2 quarts of chicken broth 2 can Great Northern white beans, drained and rinsed salt and pepper 1 cup half and half 1/4 cup cilantro 1 Tbs lime juice 1 cup small pasta (I use orzo) grated cheddar cheese Directions: 1) Either saute the chicken breasts

Loaded Smashed Potatoes

I started to make some of my smashed potatoes, but then I realized I was craving some loaded potatoes instead. So I decided to load up my smashed potatoes and they were so good. It has the perfect ratio of skin to potato. Yes that makes me sound like a potato nerd. I am aware. Potatoes are so darn good.  Ok, enough rambling.  Here's the recipe: Ingredients: 10-20 small potatoes (depending on how many you want to make) kosher salt olive oil Sour cream Green onions, sliced Shredded cheese, any kind Bacon (optional ) Directions: 1) Rinse any dirt off the potatoes and remove any hard spots 2) Either boil your potatoes or microwave them until they are soft. Allow to cool slightly. Using a paper towel smash the potatoes and place them on baking sheet lined with parchment paper. Kung PAO Chicken

I was in the mood for some Asian cuisine and I have made this recipe a couple times so I decided to make it for the blog. It is a quick, great tasting, and easy meal. I always make the marinade and sauce first, then i chop up all my veggies and then I start cooking. The cooking part goes so fast, so its good to have the veggies chopped up. Tiger Stripe Brownies

These take me way back to my childhood when I used to get together with my best friends and we would make these, watch movies, then scarf them all down.  For me there is nothing better than a warm dessert topped with ice cream. And these hit the spot. A warm brownie with swirls of peanut butter. I've been making these for over 10 years, so you know they must be good! Ingredients: 1/3 cup chocolate chips  1 Tbs butter 1/3 cup peanut butter 2 Tbs vegetable oil 1/2 cup brown sugar 1/2 sugar 2 eggs 1 1/2 tsp vanilla extract 3/4 cup flour 1/4 tsp salt Directions: 1) Preheat oven to 325, and grease an 8x8 baking dish 2) Melt chocolate and butter in a microwave safe dish, until melted, stirring every 30 sec. (about 1-2 min) 3) In a separate bowl, beat peanut butter and oil for 1 min 4) Add sugars and beat until mixed. 5) Add eggs one at a time until combined.  6) Add vanilla, flour and salt 7) Take 1/3 cup of the mixture and add it to the chocolate mixture.

Yummy Chicken Pasta

My mom has been making this dish for years - so this recipe is from her. It's so easy and delicious. It's got a little bit of spice with a lot of creaminess from the sauce. I always keep these ingredients in my pantry in case I need a quick meal - so I can whip this up quick. Serves: 4 Prep time: 0 min Cook time: 15 minutes Ingredients: 1 lb of chicken, diced 1 box of dreamfields pasta (or any pasta) Dreamfields is between 13-14 oz 1 can of rotel 1 jar of alfredo sauce 1 can (7 oz) green chilis (I like the hot) Directions: 1) Cook pasta to al dente as directed 2) Heat a pan over medium heat and cook chicken. 3) Drain the pasta and return to pan, add in the Alfredo, rotel and green chilis. Chicken Quesadilla

I had some leftover tortillas and I didn't know what to do with them. I had some extra cheese too so I decided to whip these quesadillas up and they turned out delicious! Good enough to be on the blog! I will definitely have to make these again.  They were so simple. I served mine with queso and sour cream (because I can never get enough queso) I used 1 chicken breast and it was enough for 3 quesadillas.  Ingredients: 1 chicken breast, diced very small 4 mini sweet peppers 1/3 cup diced onion 1/3 - 1/2 cup cheese for each (I used half cheddar and half Monterrey Jack) 5 dashes of hot sauce (I used Franks red hot) Sour cream  Butter Tortillas  Directions: 1) Cook the chicken and in a separate pan cook the onions and peppers until translucent (8 - 10 min) 2) Put hot sauce onto the chicken. 3) Divide the chicken and peppers into 3 equal servings 4) Butter one side of the tortilla and put that side down into a pan over medium heat. 5) Layer some cheese, then

Crockpot Stroganoff

This recipe is soooo good, and I always serve it with rice. It doesn't really have a strong 'stroganoff' taste so even if you don't like stroganoff I recommend you try it. I served this at a dinner party and it was gone so fast, everyone loved it.   You can serve with noodles or even mashed potatoes would be good - so it's up to you.  INSTAPOT! Works very well in the instapot :) Cook at high pressure for 30 min, steam sealing. Then add cream cheese and do another 3 min high pressure steam sealing. (manually releasing steam each time). Omitted the sour cream.
