Stuffed Zucchini Boats

I love tacos and I love zucchini - could there be a better dinner idea? I don't think so. This was the perfect combination of meat and veggies - and a lot healthier than some fried taco shells! If you have never been to skinnytaste.com (where I found this recipe) you should check it out. It is one of the best blogs I've seen and Gina's recipes are so delicious. She has wonderful pictures and nutritional facts with each recipe. Go check it out! Ingredients: 4 medium zucchini, cut in half lengthwise 1 lb ground meat 1 tsp garlic powder 1 tsp cumin 1 tsp salt 1 tsp chili powder 1 tsp paprika 1/2 tsp oregano 1/2 of a small onion, minced 2-3 Tbsp bell pepper, minced 4 oz tomato sauce 1/4 cup water cheese light sour cream and scallions for topping (optional) salsa (optional) Directions: 1) Set oven to 400, and bring a large pot of salted water to a boil. Using a small spoon, carve out the inside of the zucchini, leaving a small rim around the edges. 2)

Strawberry Rhubarb Pie

My brother's favorite pie. He used to make my mom make this for him all the time. For his 29th birthday I decided to make one for him. Boy was he happy! The sweetness of the sugar mixed with the tart of the rhubarb is to die for. Since I want to fit into my wedding dress I didn't make one for myself, but afterwards I really regretted that decision.  This pie is pretty heavy so I would recommend using a sturdy pie dish. Not the flimsy ones you can toss out afterwards. Ingredients: 1 recipe of the Pie Crust 1 lb of Rhubarb, diced 1 lb of strawberries, diced 2/3 cup sugar 1/4 cup brown sugar 1 Tbs lemon juice 1/4 tsp salt 1/4 cup quick cooking tapioca  2 TBs unsalted butter 1 large egg yolk Directions: 1) Preheat oven to 400. Roll 1 piece of the dough out and place in the bottom of the pie pan. Roll to about a 12-inch circle. 2) Mix together: strawberries, rhubarb, sugars, lemon, salt and tapioca into a large bowl. Easy and Delicious Pie Crust

This pie crust was so easy and so delicious! I will never buy store bought again! It is so flaky and buttery and yummy! This recipe comes from Smitten Kitchen - a wonderful food blog. Check it out! They have some very nice pictures as well. Ingredients:  2 sticks of cold butter, unsalted 2 1/2 cups flour 1 cup cold water (maybe 3/4 cup) 1 TBS of sugar 1 tsp salt Directions: 1) Fill up a measuring cup with water and drop an ice cube in it so it stays cold 2) In a large bowl, add the flour, sugar and salt and mix well. 3) Dice up 2 sticks of butter into cubes and then add to the flour. 4) With a pastry blender, start working the butter into the flour until the butter is the size of peas. 5) Add the water - start with a 1/2 cup and start working it into the dough with a spatula. Then add the water 1 TBs at a time until the dough comes together. 6) Split the dough in half and wrap in plastic wrap. Let it chill in the fridge 1-2 hours before rolling.  Enjoy!

Avocado Chicken Burritos

I'm starting to love avocados more and more each day. They are a healthy source of vitamins, fiber, potassium, and so much more. I added some chicken and beans to make it a full meal.  If you have leftover rice this would be a great place to add it as well! I didn't add it and it turned out great. This makes 4 burritos. Ingredients: 1 avocado, sliced 4 flour tortillas 1/3 cup Mexican cheese blend (or cheddar) 1 can pinto beans 2 small chicken breasts 1 Jalapeno, diced 1/4 cup cilantro, chopped Sour cream Directions: 1) Grill the chicken breasts or cook them on the stove if you do not have a grill. I season them with my favorite seasoning - Kickin Chicken (from Weber). You can use your favorite seasoning. Once cooked, dice up. 2) Dice the avocado and spread evenly between the 4 tortillas. Sprinkle a little salt and pepper over the avocado.  3) Then split up the pinto beans, cheese, and cilantro. I like to add about 2 TBS of sour cream and some jalapeno to each

Crunchwrap Supreme

Who likes Taco Bell?? Everyone. duh!  This is one of my favorite things off the menu at Taco Bell, I knew it would be healthier if I made it at home - so I did and it was yummy! Who knew it was so easy to make my own crunch wrap! This will make about 5, depending on how full you stuff them Ingredients: Large Flour burritos 1 lb ground beef 1 packet of Taco seasoning (or use the homemade one below) Tortilla chips Sour cream Nacho cheese or Queso Diced tomatoes  Refried beans (optional) Shredded Lettuce (optional) Homemade Taco seasoning: 1 tsp cumin 1 tsp garlic powder 1 tsp chili powder 1 tsp salt 1/2 tsp oregano Directions: 1) Brown ground beef and then add in the taco seasoning. Set aside 2) Heat a skillet over medium heat 3) Microwave the tortillas for about 10 seconds, it makes them easier to wrap. 4) Lay a tortilla down and layer as so:  - Refried beans  - Taco meat  - sour cream  - queso  - crushed tortilla chips (I use about 3 per crunchwrap)  -
