EASY Chicken & Broccoli Alfredo

This is another go-to recipe when I am in a time crunch. I usually have all the ingredients on hand and its quick to whip up in a hurry.  Ingredients: 8 oz angel hair or linguine pasta (usually half a box) 1 lb chicken, diced 2 Tbs butter 1 1/2 cups broccoli, chopped small 1 can cream of mushroom soup 1/2 cup milk 1/2 cup freshly grated Parmesan cheese salt and pepper Directions: 1) Cook the pasta according to package directions, and add in the broccoli for the last 4 minutes of cooking. Drain and rinse so the pasta doesn't stick. 2) Meanwhile, heat a pan to medium-high heat, add butter. Season the chicken with salt and pepper and then cook until done. Set aside. 3) Stir the soup, milk, cheese and some black pepper in a skillet and cook until the mixture is warm.  4) Combine the sauce, chicken, and pasta and cook until warm, if needed Enjoy!

Cube Steak with Gravy

The meat was so tender some of it fell apart. YUM. Ingredients: 4-6 cube steaks (roughly 1.5 lbs)  1 can cream of mushroom 1/3 cup water 1 packet of dry onion soup mix 4-8 oz mushrooms (quartered is good for this recipe) 1 small onions, diced salt and pepper  Directions: 1) Add the soup, water, and soup mix to the pot and mix. 2) Add in the steaks and get them covered with gravy, top with veggies and get some gravy on those too (keeping the steaks on the bottom) 3) Heat on low for about 5-7 hours  4) Serve with some potatoes! Enjoy!

Chicken & Veggie Soup

This soup is a nice, hearty, chicken and veggie soup. It's really versatile and you can use your favorite veggies in place of the ones I have.  It goes well with some bread or cheese or both! Ingredients: 2 cups of chicken 3 Tbsp butter 1 small onion, diced 1 large carrot, diced 1 cup broccoli, chopped small 4 oz mushrooms, sliced 1/4 cup flour 1 cup milk (I used skim) 1 cup heavy cream 3/4 cup chicken broth 1/4 tsp red pepper flakes salt and pepper cheese for topping (optional) Directions: 1) In a large pot, melt butter and then saute the veggies until soft. 5-8 minutes. Sprinkle in the flour, and stir constantly for about 2 minutes to let the flour cook. 2) Slowly add in the broth, milk, cream, and red pepper flakes. Season generously, to taste, with salt and pepper.  3) Using a whisk, slowly bring the soup to a simmer and cook for 10 minutes.  4) Add in the cooked chicken and cook until warm, 1-2 minutes.  Enjoy!

Fruit Pizza

I see these pizzas in the store all the time and they look so good. The cookie on the bottom, creamy white middle and the pretty fruit topping make the perfect eye pleasing dessert.  I have never made one so I decided to give it a whirl and it was a hit! This recipe makes a pretty good sized cookie, it filled up a pizza pan, about 13-14'' round.  You can always half the recipe for a smaller crowd.  Ingredients: 1/2 cup butter 1 1/4 cup sugar 1 large egg 1 1/4 cup flour 1/2 tsp baking soda 1/4 tsp salt 8 oz. cream cheese (I used reduced fat) 2 tsp vanilla 1/2 cup sugar Fruit (I used blueberries, strawberries and kiwi) Directions: 1) Heat oven to 350. Mix butter and sugar in blender until creamed. Add in the egg and mix until just combined.  2) Combine the dry ingredients in a seperate bowl, and then slowly add into mixer. 3) Put parchment paper over your pizza pan then add the dough on top and roll out the dough into a circle. Lobster Chowder

During lent I always struggle to find good no meat recipes. I am always making some type of fish, so I wanted to switch up the seafood and try a lobster chowder .  If you like a smooth consistency in your soups, you can make this recipe into a bisque. Just puree all the ingredients before step 5. I went to Costco to originally get lobster tail, but they also had these mini lobster called Langostino and they worked perfect. I didn't have to cut them up they were the perfect bite size. If you can't find them in your grocery store, you can cook a lobster tail and dice up the meat.  Ingredients: 3 Tbs oil 3 Tbs Flour 1/2 cup minced onion 1 cup corn (2 ears) 2 potatoes, diced 2 Tbs shallots  2 Tbs celery 1 Tbs garlic 1 tsp salt  1/4 tsp cayenne (1/2 for spicy) 1 cup fish stalk or water 2 bay leaves 2 1/2 cups milk 1 1/2 cups heavy cream 1/2-1 lb cooked lobster meat or langostas 1/4 cup green onion 1 tsp Cajun spice mix of any kind (option

Potatoes Au Gratin

Another potato recipe - I don't think there can ever be enough. :) I make these on special occasions because they do take a little longer to make. But boy are they worth it!  I made them on Easter to go with a roast and they were the perfect combination.  Ingredients: 3 medium size potatoes 3 Tbs flour 1 1/2 cup milk 1 tsp salt 2 gloves of garlic, minced (or 1 tsp garlic powder) 1 tsp dried onion 1 1/2 cups grated sharp cheddar cheese salt and pepper Directions: 1) Heat oven to 350. In a small sauce pan over medium heat, melt butter and blend in flour. Cook 1-2 minutes, stirring constantly. Stir in the milk, minced garlic, dried onions, and season with salt and pepper 2) Cook sauce on low until smooth and boiling, stirring with a wisk. Remove from heat and stir in cheese.  3) Place half of the potatoes in a greased 8x8 pan and pour half the cheese sauce over. Tomato and Avocado Salad

This salad is so easy and tasty - it is one of my salad staples. You can use any type of dressing as well, it goes great with them all Makes 2 side salads Ingredients: 1/2 head of romaine 1/2 avocado, diced 1 green onion, diced 10 mini salad tomatoes, diced Dressing of choice Salt Pepper Directions: 1) Chop up the romaine and put into a large bowl, add the salad dressing and mix until combined. Add the lettuce to their serving bowls. 2) Top dressing with avocado, then flavor the avocado with a little salt and pepper. 3) Add the tomatoes and green onions Enjoy!

Cheesesteaks

Is there anything better than a philly cheesesteak? I don't think so! I was craving one so I found this recipe from the little kitchen  and decided to give it a whirl. I never knew making cheesesteaks at home was so easy!  I will be making these again for sure.  They even reheated great the next day.  Ingredients: 4 square sheets of tin foil 4   hoagie rolls , sliced  1/2   green pepper , sliced 1   large white onion , cut in half and sliced thick 8 oz   mushrooms , sliced 1.25-1.5 lbs   beef ribeye steaks  (sliced thinly across the grain and then chopped roughly again so they are small pieces), split into 4 portions salt  &  pepper 3 1/2 Tbsp   salted butter 8 slices  of  cheese  (I used Provolone) Directions:  1) Prepare 4 square sheets of tin foil (and slice the hoagie rolls before you start.
