EASY Chicken & Broccoli Alfredo
This is another go-to recipe when I am in a time crunch. I usually have all the ingredients on hand and its quick to whip up in a hurry.
Ingredients:
8 oz angel hair or linguine pasta (usually half a box)
1 lb chicken, diced
2 Tbs butter
1 1/2 cups broccoli, chopped small
1 can cream of mushroom soup
1/2 cup milk
1/2 cup freshly grated Parmesan cheese
salt and pepper
Directions:
1) Cook the pasta according to package directions, and add in the broccoli for the last 4 minutes of cooking. Drain and rinse so the pasta doesn't stick.
2) Meanwhile, heat a pan to medium-high heat, add butter. Season the chicken with salt and pepper and then cook until done. Set aside.
3) Stir the soup, milk, cheese and some black pepper in a skillet and cook until the mixture is warm.
4) Combine the sauce, chicken, and pasta and cook until warm, if needed
