Chicken & Veggie Soup
This soup is a nice, hearty, chicken and veggie soup. It's really versatile and you can use your favorite veggies in place of the ones I have.
It goes well with some bread or cheese or both!
Ingredients:
2 cups of chicken
3 Tbsp butter
1 small onion, diced
1 large carrot, diced
1 cup broccoli, chopped small
4 oz mushrooms, sliced
1/4 cup flour
1 cup milk (I used skim)
1 cup heavy cream
3/4 cup chicken broth
1/4 tsp red pepper flakes
salt and pepper
cheese for topping (optional)
Directions:
1) In a large pot, melt butter and then saute the veggies until soft. 5-8 minutes. Sprinkle in the flour, and stir constantly for about 2 minutes to let the flour cook.
2) Slowly add in the broth, milk, cream, and red pepper flakes. Season generously, to taste, with salt and pepper.
3) Using a whisk, slowly bring the soup to a simmer and cook for 10 minutes.
4) Add in the cooked chicken and cook until warm, 1-2 minutes.
Enjoy!
