Fruit Pizza

I see these pizzas in the store all the time and they look so good. The cookie on the bottom, creamy white middle and the pretty fruit topping make the perfect eye pleasing dessert. 
I have never made one so I decided to give it a whirl and it was a hit!

This recipe makes a pretty good sized cookie, it filled up a pizza pan, about 13-14'' round. 
You can always half the recipe for a smaller crowd. 

Ingredients:
1/2 cup butter
1 1/4 cup sugar
1 large egg
1 1/4 cup flour
1/2 tsp baking soda
1/4 tsp salt
8 oz. cream cheese (I used reduced fat)
2 tsp vanilla
1/2 cup sugar
Fruit (I used blueberries, strawberries and kiwi)


Directions:
1) Heat oven to 350. Mix butter and sugar in blender until creamed. Add in the egg and mix until just combined. 
2) Combine the dry ingredients in a seperate bowl, and then slowly add into mixer.
3) Put parchment paper over your pizza pan then add the dough on top and roll out the dough into a circle. Bake for 13-15 minutes or until dough is set 
4) Meanwhile whip the cream cheese and sugar in mixer until fluffy, and then add in the vanilla.
5) Once the cookie has cooled, spread over the cookie and then top with fruits
