Pumpkin Bars

Recipe from my mom - I always remember this because it was printed on an orange index card.  I half the recipe if it is just me. Also, I use pumpkin pie spice mix instead of the separate.  Pumpkin Bars Ingredients: 2 c flour 2 c sugar 1.5 tsp cinnamon 1.5 tsp nutmeg 1.5 tsp ginger 2 tsp baking powder 1 tsp baking soda 1 tsp salt 3/4 c oil 4 eggs 2 c pumpkin (16 oz) Mix all dry ingredients, add wet ingredients and mix. Bake 350 for 25 min. Frosting: 3 oz cream cheese 2 c powder sugar 6 Tbs butter 1 tsp milk 1 tsp vanilla Soften cream cheese and butter. Add rest of ingredients. Add more milk if needed.

Italian Sandwhiches

Ingredients : - 2 slices turkey - 5-8 pepperoni slices - 4 large Salami  - 1 slice provolone Naan Heat in oven and dip in marinara! I added jalapeño to mine.

Chicken Lazone and Cajun Rice

 I made these 2 together with a few adjustments easy-chicken-lazone  - I added 2 Tbs of real parmesan cheese and seasoned with cajun (slap yo) Cajun Rice  - I made regular rice (3/4 cup uncooked) and added 1 sautéed onion, 1 sautéed red bell pepper, cajun seasoning, and some salsa since I didn't have any rotel. These were so good together. The Lazone sauce would be good on anything.

Banana Oat Pancakes

 Makes 1 serving (4 small pancakes) Blend in blender and then cook! 3/4 cup oats 1/4 cup milk 1/2 large banana 1 egg 1 tsp baking powder 1 TBS maple syrup Few dashes of cinnamon

Banana Peach Smoothie

 Delicious fruit smoothie!  2 servings Blend in blender: 2 carrots 1 peach 1 small banana (or 1/2 a large) 1/2 cup ice 1 small can pineapple (1/2 large) 4 oz water

Scalloped Potatoes

Nice easy recipe that turned out great! I baked with a lid on for the first hour but it burned around the edges so next time maybe only use a lid for 30 minutes or not at all.  I also baked at 350 for 90 minutes since that is what my oven was set at for the ham. Serves 4 people Ingredients: 6 larger russet potatoes, peeled and sliced 3 Tb flour 3 Tb butter 2.5 cups milk Cheddar cheese (1.5-2 cups) Salt and pepper Directions:  Recipe credit and video here Layer: potatoes / cheese / S&P  Over top layer pour the roux and top with cheese.

Banana Bread

For this I used the corning ware white dish that is almost the same shape as a bread pan and it worked great!  I did not have buttermilk so I mixed together 1/2 cup milk (1 percent) and 1 tablespoon of lemon juice. (Stir and let sit for 20min to curdle) . Could also half this. Ingredients: 1 cup sugar 1/2 cup butter, softened 1 1.2 cups flour 1/2 tsp baking soda 1/2 tsp salt 2 eggs 1 tsp vanilla 1/4 cup buttermilk 3 bananas Directions: Cream butter and sugar together, add eggs 1 at a time, add in bananas and mix.  Add in buttermilk and vanilla Mix together flour, baking soda and salt in a separate bowl and then mix in. Pour into buttered dish and bake for 60 min at 350 degrees

Salmon Bowls

Need: Salmon English cucumber Green onion avocado Seaweed sheets Rice yum yum sauce soy sauce salmon marinade: soy sauce and honey Combine it all  I like to make mine into mini sushi with seaweed sheets I cooked the salmon at 450 for 8-10 min. Didn't get crispy. Maybe I need to marinate in a bag next time.

Peanut Clusters

My Dad loves these! Ingredients: 1 (12 oz) can of cocktail peanuts (salted not roasted) 12 oz of chocolate bark (melting chocolate) 1 (11.5 oz) bag of milk chocolate chips Melt the chocolates together and then add in the peanuts.  Scoop onto parchment paper and let sit for 2 hours.

Blueberry Sauce

My Baking addiction recipe I usually half the recipe if it is just for me. INGREDIENTS 2 cups fresh or frozen blueberries 1/2 cup water 1/2 cup granulated sugar 2 tablespoons fresh lemon juice 2 tablespoons cornstarch, mixed with 2 tablespoons cold water 1/2 teaspoon vanilla extract Zest of 1 lemon (about 1 tablespoon), optional INSTRUCTIONS In a medium saucepan over medium heat, combine the blueberries, 1/2 cup of water, sugar and lemon juice. Stir frequently, and bring to a low boil. In a small bowl, whisk the cornstarch with 2 tablespoons of cold water. Slowly stir the cornstarch into the blueberries, taking care not to crush the blueberries. Simmer until the homemade blueberry sauce is thick enough to coat the back of a metal spoon, about 5 minutes. Remove from heat and gently stir in vanilla and lemon zest.

Blueberry Oat Smoothie & PB Banana Oat Smoothie

These are my 2 favorite breakfast smoothies.  Serves 2 people. Blueberry Oat Smoothie 1 banana  1/2 cup frozen blueberries 1 cup old fashioned oats Fill the blender up with milk to the 30oz line. Blend! PB Banana Oat Smoothie 1 banana 1/4 cup peanut butter 1/4 cup ice 1 cup old fashioned oats Fill the blender up with milk to the 30 oz line. Blend!

French Toast

This recipe is from Cooking Classy! I used 1% milk and it worked great! Ingredients: 10   slices   brioche 4   eggs 3/4   cup   whole milk 1/4   cup   heavy cream 1   Tbsp   granulated sugar 2   tsp   vanilla extract 1 1/2   tsp   ground cinnamon Butter for griddle Warm maple syrup

Taco Bell copycat quesadilla sauce

Dip your quesadilla in this!! Mix together: 1/4 cup sour cream 1/4 cup mayo 1 Tbs jalapeño juice 1 tsp sugar 1 tsp cumin 1 tsp paprika dash of cayenne dash of garlic powder I either will dice up jalapeños and add to sauce or just add jalapeños to the quesadillas (and refried beans!)
