Banana Bread Muffins
I had some old bananas on the counter and I needed to make something. I didn't feel like banana bread so decided to try to make some muffins. These are the perfect individual size and tasted great too! With only 2 tbsp of sugar these are not so bad for you! I added chocolate chips into mine but you can substitute that out for whatever you would like.
Ingredients:
1 brown banana
1 Egg
1/2 cup of milk
2 Tbsp sugar
2 Tbsp canola oil
1/2 tsp salt
2 tsp Baking powder
1 cup flour
1/4 cup choc chips (or blueberries/nuts/etc)
Directions:
1) Heat oven to 425. Add flour and the banana to the mixing bowl and mash the banana into the flour with a fork.
2) Add the rest of the ingredients (besides the choc chips) and mix with a mixer until incorporated.
3) Fold in the chocolate chips with a spoon or spatula
4) Bake in muffin tins for 16-19 minutes
