Chicken Lettuce Wraps

I LOOOOOOOOVE me some lettuce wraps. The crunch of the lettuce with the warm tasty inside just makes my taste buds dance! This recipe is very versatile as well - you can use whatever vegetables you have on hand and it works great with almost any type.
In the ones I made last night I used some red and green bell pepper, snow peas and zucchini. They turned out awesome! The key is to cut your vegetables very small, and make sure your meat is very small (that's why I use the ground meat). That way you get a taste of everything in each bite.


Ingredients:
1 lb ground chicken (or turkey)
lettuce (bibb, butter or iceberg)
1-2 cups of fresh vegtables, chopped very small
1 onion
3-4 garlic gloves
2 tsp ginger
1 Tbs soy sauce
1/4 cup hoisin sauce
1 Tbs rice wine or red wine vinegar
2-4 tsp Siracha (depending on your spice level)
1 can (8oz) water chestnuts
3-4 green onions, sliced 
2 tsp pure sesame oil

Directions:
1) Wash lettuce leaves, while keeping whole, set aside to drain.
2) Heat oil in pan and add onions and vegetables. saute for 5 minutes 

3) Add the ground chicken, garlic and ginger, and saute until meat is almost cooked. Then add in the soy sauce, wine, hoisin and siracha.



 4) Stir to combine and then cook until meat is done. About 2 minutes. Add in green onions and water chestnuts.


5) Cook 1-2 minutes until onions start to wilt. Remove from heat and then add in the sesame oil. Spoon meat into lettuce and eat like a taco. 



Make a face with your Siracha and Enjoy!
