Cheesy Fingerlings

Another potato recipe for the books.

These are so easy and go so well with anything. Steak, chicken, you name it.








Ingredients:
10 mini potatoes
1/2 cup cheddar cheese
Sour cream, optional

Directions:
1) Heat oven to 400 degrees. Microwave the potatoes for 3-4 minutes until soft. Cut in half and then scrape out A LITTLE of the middle of the potato to make room for the cheese. 
3) Sprinkle with olive oil, salt and pepper and cook in the oven until the potatoes are a little brown. (I like a little crunch on mine). It takes about 30-45 minutes depending on the size of your potato.
4) Take them out of the oven and put the cheese on right away so it melts nicely. Let cool for about 5 minutes. 

I like to dip min in sour cream.
